When checking the throat temperature with your hand, always use the back of your hand. The back of your hand is more sensitive to heat and this will allow you to sense the metal temperature when it is hot without burning yourself.
Use this technique on electrical equipment too. As if it is hot, the electrical current will cause your arm to pull away from the machine rather than grab onto it.
